Dolcelatte is a soft Italian blue cheese made from cow's milk and produced by Galbani. It was developed in 1968 as a milder, sweeter alternative to traditional Gorgonzola, with a creamy body and blue-green mould veins rather than the firmer, sharper profile associated with aged blue cheeses. The cheese is used as a table cheese and in cooking, especially where a blue-cheese flavor is wanted without the stronger pungency of some mature varieties.
