description Enoki Overview

Enoki is the cultivated form of Flammulina filiformis, an edible mushroom widely used in East Asian cooking. Commercial cultivation in low light and high carbon-dioxide conditions produces long white stems and very small caps, unlike the shorter, orange-brown fruiting bodies found in the wild. Enoki is eaten in soups, hot pots, stir-fries, and other dishes, and should be cooked rather than consumed raw.
