Pas de Bleu is a Belgian blue-veined soft cheese associated with Flanders, rather than a cheese from France's Pas-de-Calais region. It is produced by the Ghent cooperative Het Hinkelspel from raw cow's milk, with Penicillium roqueforti added to create blue veining. The cheese has a dark inedible rind, a soft paste, and salty, spicy flavors that become more pronounced as it matures.
