Sabayon is a light custard or sauce made by whisking egg yolks, sugar, and wine over gentle heat until the mixture becomes warm, thick, and foamy. The name is commonly used in French cooking, while the closely related Italian preparation is called zabaglione and is traditionally associated with Marsala wine.
