description Shchi Overview

Shchi is a traditional East Slavic soup most closely associated with Russian cuisine, where it has been eaten in numerous forms for centuries. Cabbage is the defining ingredient, used either fresh or fermented as sauerkraut, while meat, potatoes, roots, mushrooms, and herbs may be added according to the recipe. Sauerkraut produces the distinctly sour version known as sour shchi, and the soup is commonly served hot with rye bread or sour cream.
