description Hurka Overview

Hurka is a traditional Hungarian cooked sausage made from pork offal combined with rice and seasoning. The two main varieties are májas hurka, which contains liver, and véres hurka, which contains blood; recipes differ by region and household. It is closely associated with the autumn and winter pig-slaughter tradition, when the freshly prepared sausages are commonly cooked and served as part of the meal. Unlike a dry salami, hurka is generally eaten fresh rather than aged.
