Pulihora is a South Indian rice preparation associated especially with Andhra Pradesh and Telangana. Cooked rice is mixed with a concentrated tamarind seasoning and a tempering of ingredients such as mustard seeds, lentils, dried chilies, curry leaves, turmeric, and peanuts, although recipes vary. Its sour, salty, and spicy flavor makes it common at festivals, religious gatherings, and family meals, where it may be offered as prasadam in Hindu temples. It is generally served warm or at room temperature.
