Danbo is a Danish ripened semi-hard cheese made from cow's milk. It is typically pressed into a flat rectangular form, with a pale ivory to yellow body, a firm elastic texture, and small, round, evenly distributed holes. Surface ripening gives it a mild, slightly acidic, aromatic flavor that becomes stronger with age.
